General Manager - Edinburgh
About the role
As General Manager, you will lead our Edinburgh café and help define what Origin retail looks and feels like in Scotland. You will lead a high-performing team, deliver a consistently excellent customer experience, and run a commercially successful café that reflects our brand and values. This is a hands-on leadership role with real on-the-floor presence and clear ownership of performance, people, and standards.
What you'll do
Lead day-to-day operations, service quality, and front-of-house standards
Build, coach, and develop a skilled and engaged team, including SCA training progression
Champion Origin’s customer journey, coffee knowledge, and community presence
Maintain strong health, safety, and food compliance standards
Actively identify opportunities to grow sales and community engagement
Deliver agreed revenue and EBITDA targets
Who You Are
An experienced hospitality leader with a background in speciality coffee or premium hospitality
Commercially confident, operationally strong, and calm under pressure
Passionate about people development, excellent service, and quality coffee
Energised by leading a high-profile, design-led cafe
Values-led, inclusive, and consistent in your leadership approach
Skills and Experience
Experience managing a specialty coffee site or hospitality venue
Financial fluency across P&L, COGS, labour and forecasting
Skilled in people management, coaching and team development
Strong communication, organisation and leadership skills
Familiar with digital tools and Office 365
Experience in B Corp businesses or purpose-led environments is a plus
What success looks like
Delivering an outstanding guest experience every day, with exceptional coffee quality, smooth service, and a premium in‑store environment that reflects Origin’s brand and positioning
Building and leading a motivated, high‑performing team through strong coaching, clear development pathways, high retention, and a genuinely inclusive culture
Driving commercial performance by meeting and exceeding targets, with confident ownership of P&L, labour and stock efficiency, COGS, and Average Transaction Value
Maintaining consistently high operational standards, ensuring efficient workflows, excellent presentation, and reliable quality across coffee and customer service
Bringing the brand to life in store through thoughtful visual merchandising, memorable customer experiences, and strong community connection that builds loyalty and footfall
